CleanSmoke Project Workshop

The Cleansmoke workshop is happening today, June 27th, at the Auditorium Abreu Faro at Instituto Superior Técnico (Polo da Alameda) where the results of the Cleansmoke Project, funded under the P2020 support framework, are being presented.

The CleanSmoke Project aims to respond to the development, optimization and certification of new smoking equipment, aimed at reducing the levels of polycyclic aromatic hydrocarbons (PAH) in smoked foods.

In the Workshop "Cleansmoke – development of materials and equipment for smoking foods with lower PAH content", the following topics will be addressed:
 

  • Problem of the association between consumption of meat products and colon cancer
  • Development of materials to reduce PAHs content in smoked products
  • Development of food smoking equipment
  • Validation of new smoking processes
  • equipment certification

 

The Project has the participation of SIMIA, Ténico Lisboa and FMV.
